Peanut Butter Raspberry Breadis a healthy chocolate (or vanilla) treat. This is one of our favorite dairy-free and grain free recipes. It’s naturally gluten free, low in sugar, and is SUPER SIMPLE to make! Great for any holiday, celebration, or just clean eating!

Is it just me or does each month fill up with more holidays and celebration the closer we get to summer? My goodness. We have Cinco de Mayo (yes, we celebrate in Texas), Mother’s Day, Graduation, Memorial Day, and if you are like me, you have about 10 baby showers, birthdays, race events, weddings, etc.

Whoa. That’s a lot of things to celebrate and food to make or eat.

And to top that off, did you know that May is National Celiac Awareness Month? Consider that theicing on the gluten free “celebration month” cake ya’ll! Celiac awareness is somethingwe can participate in forall these celebrations, events, and holidays! It gives US ALLa chance to support others by doing so!

One that is great for kids, for mother’s day, for graduation, for FUEL, for a wedding or baby shower, for all things that include FUN, FAMILY, and FOOD! I know, I’m may be a bit bias here, but I have a feeling you will agree with me on this recipe.

Peanut Butter Raspberry Bread – Grain Free and Dairy Free

Ingredients

  • 6 eggs (or 4 eggs and ¼ cup egg whites for lighter version)
  • 2 cups berries (½ cup saved for topping)
  • 1 tsp baking powder
  • ½ cup cocoa powder (for chocolate version)
  • 1 ¼ cup almond flour (meal)
  • 1 cup peanut flour (coconut flour or pea protein will work too)
  • ⅔ cup coconut sugar (can use raw or brown sugar if you’d like)
  • ½ tsp sea salt
  • 2 tbsp peanut butter or almond butter
  • ½ tsp vanilla extract
  • 2 tbsp potato starch or arrowroot starch
  • dash of cinnamon

Instructions

  1. First, wash you raspberry and place in food processor or vitamix. Be sure to save ½ cup whole raspberries for topping. Pulse until smooth.
  2. Preheat oven to 350F degrees Grease a 9 in round baking tin or 14 mini cakes/ muffins. Feel Free to use liners instead of grease.
  3. Next, add your eggs, baking powder, sugar, baking soda, peanut butter, pb flour, almond meal, and cocoa to the raspberry in the processor. Run until you have a cohesive cake mixture.
  4. Pour into the prepared muffin/cake cups or cake tin and place extra whole raspberries in center of each mini cake or muffin. Then bake for 45 minutes to 1 hour, or until a skewer comes clean from the center.
  5. Let cool in the pan on a rack for 15 minutes.

Notes

Note – I made half of these without the cocoa powder and added 1 tablespoon cinnamon instead. Pour half the batter into muffin cups. Then I added the cocoa and blended again. Poured that half in the remaining cups. So same batch but half were chocolate, the other was cinnamon vanilla. You can easily just pick one or the other pour it all into a cake pan or muffin. All taste great!

This makes on cake or 14 mini cakes/muffins. I used mini cakes and muffins so that I could share with more people at different celebrations, yea!

When I say this is an easy and delicious recipe, I mean it. The bread is actually moist (I hate that word, but it’s true), the flavor is light but also sweet, and you can add just about anything to top it off. More peanut butter for a post workout or breakfast bread, whip cream/coconut cream for a dessert, or keep it plain and great for a snack, whatever!
