  • 2 chicken breasts
  • 6 cups water
  • 12 teaspoon salt
  • 12 cup onion, finely chopped
  • 12 cup celery, finely chopped
  • 12 cup carrot, finely chopped
  • 14 cup butter
  • 12 cup milk
  • 1 (10 3/4 ounce) cream of chicken soup
  • 2 cups medium size noodles
  • pepper

  • Finely chop onions, celery and carrots. Place chopped vegetables in large saucepan with chicken breasts and water. Add salt. Bring to a boil and cover with lid. Simmer on low heat until chicken is tender.
  • Remove chicken, reserving all broth and vegetables as stock for soup. Debone chicken. Chop in small pieces and set aside.
  • Add noodles to broth and simmer until noodles are one-half done. Add butter and cream of chicken soup. Simmer slowly for 5 minutes. Add milk and chopped chicken. Give taste test for salt and pepper. For thinner soup, add more milk.
  • Note: After noodles have been added do not bring to a full boil. Simmer slowly on very low heat. Enjoy!

  2. This was very good. It really hit the spot. I added about 3/4 cup of sour cream and no milk though. I will definatly be making this again-=)

  3. I improvised quite a bit but I believe I kept to the spirit of the recipe. I had leftover rotisserie chicken, so I chopped up about 2 cups and set aside. I melted 2 T. butter in my soup pot and sautéed the vegetables until they were slightly softens seasoned with 1/2 t. each salt and pepper. I added 6 cups of low sodium chicken broth and simmered for about 20 minutes. I then followed the recipe from there, using Cream of Chicken with Herbs soup and extra-wide noodles. The seasoning was just right. We thoroughly enjoyed this soup and would definitely make this again.

  4. I've made this soup twice and it's simply AMAZING! These are the modifications I made to make it "my own". To get extra chicken flavor I added Knolls chicken bouillon to the water when I boiled the veggies. I also doubled the celery and carrots and increased the amount of chicken to make it even more hearty. Another modification I made was to add about a tsp of crushed red pepper flakes. It didn't make it spicy, but it did lend an interesting flavor note. The real secret to this soup, though, is the cream of chicken soup and milk that comes at the end of the process. I've used cream in the past, but that's overkill. Milk is fine. The author's suggestion to not bring the water back to a boil after dumping in the noodles is a good one. You don't want the pasta turning to mush.
